Gnocci Braised Wild Pig

Grandma’s 7 hour braised pork with a black n white gnocchi, parsnip puree, dehydrated, beets, asparagus, manchego, squid ink crema.

 

Japanese wings

Crushed peanuts, chives, shredded jicama and carrots slaw, flowers, cucumber, cilantro.

 

 Sacilian Salad

Feta, basil, fennel pollen, gremolata, scallop, white beans, balsamic reduction sauce, micro greens, bulls blood leaves,

pickled red jalapenos, caracara oranges, charcoal chile powder, hoja santa.

Chinese Ceviche

Market fish of the day in a pasilla chile blueberry coconut sauce, onion roots, carrots, dehydrated corn, clams, fish of the day.

 

Moroccan Lamb

Lamb with couscous in a green moroccan spice salsa, queso fresco, blue potato foam, chicharron, crema, dry fruit, walnuts, and pistachios.

 

Sichuan Noodle

Pasta noodles in a sesame dressing, sprouts, wasabi pearls, baby corn.

Dessert

Candied flowers, romeu e julieta, charcoal cake, candied walnuts, microwave cilantro pound cake, rose confit glass, mango gel, chocolate granola, cajeta, membrillo foam, beet crème anglaise.
